Seafood Kimchi Pancake (해물김치전 [キムチお好み焼き]) Recipe
Korean pancakes (김치전 or 김치부침개 or 김치파전) are a popular dish consumed on a rainy day. It is very easy to make. Old, well-fermanted kimchi works great for kimchi pancakes. And you can add your favorite seafood such as shrimp, scallops, squid, or oysters. If you don't have them, you can use just kimchi and it will still taste good.
For making seafood pancakes, I highly recommend that you use dashi stock. It gives you a very distinctive seafood flavor that lasts long in your mouth. Koreans and Japanese love that taste.
Koreans make kimchi pancakes very large, cut them wish scissors (like how people slice pizza), and eat together with friends or family by using chopsticks. Americans or westerners lack such a communal culinary culture, so I make them small when I take them to a pot-luck party.
